100% Chardonnay

Vinification: Harvesting is performed by hand and the grapes are crushed and pressed immediately upon reception. Fermentation begins after racking off the gross lees and ageing is in older French oak barriques in contact with the fine lees which are stirred occasionally in order to increase complexity. Bottled with a light filtration.

Elegant, full-bodied white Burgundy, notes of citrus and honey in perfect balance, all warmed by a perfume of toasty oak.

Food Matching: Fried asparagus and mixed green salad, coconut-crusted fried shrimp, poached salmon with tarragon sauce and fingerling potatoes.
