Grapes: Chenin Blanc
Exotic at first, it evolves through successive aromatic touches that go from white fruits (pears, nectarines) to more candied notes of fig and mango. When aired, the minerality is discovered.
Very rich and unctuous in the attack, the mouth evolves on spices and very ripe exotic fruits (mango, pineapple). The acidity reinforces the freshness of the whole and leaves a light finish.
Food Pairing: Exotic fruit tart tatin with salted butter caramel.
